0 Bento #212 - Waste Free Wednesday Mini Waffles & Mango

This was yesterday's Waste Free Wednesday lunch - today she's getting a special bag lunch at school because they ran their Boosterthon Fun Run fundraiser this morning!  I cheered her on with the other parents in the middle of the ring they were running around (and quickly realized in the humidity that my unruly hair needs another keratin treatment ASAP.)  Despite her hurty leg, she was able to run 33 laps and raised almost $800 for her school, and for a needy school in Guatemala.  Go Ella!


These mini waffles aren't only organic whole grain, but they taste awesome too!  Of course, I threw the box away so I can't remember the brand, but I got them at Publix, so I assume they're readily available.  I served them with organic strawberry jam & peanut butter.


Sugar snap peas and mango chunks round out lunch.

There is something about top-on carrots that I love.  Seems so earthy and real to me.  These actually arrived with long leafy fronds which I think is just so pretty and reminds me just where my food is coming from.

Here we have a medley of ceramic flower-shaped measuring cups I'm using as bowls.  They are just too sweet.  I made rice noodles and stir-fried them with shrimp and curry sauce, sprinkled with fresh cilantro.  Ella loves shrimp and noodles of any kind, so it's the perfect medium to introduce some Indian flavors.  She ate most of it [edit: this was a non-school day lunch.]

4 Bento #170 - Thai Coconut Rice Hello Kitty

A Planet Box lunch today, with another Hello Kitty, this time with Thai coconut rice in the mold instead of an egg.  The coconut rice is in honor of the Thai cooking workshop I'm taking tonight.  I made the rice with dinner last night, (smoked garlic sausage from my butcher shop sauteed with minced red onion and bok choy that I got in my CSA basket) following this recipe from Tasty Kitchen.  YUM.

Bento #170 - Thai coconut rice with sprinkle accents, deli sliced turkey, organic sliced carrots, organic mango, dried cherry, craisin, blueberry & peanut medley, and some fruit gummy vitamins.
