Normally I make rollup/sushi sandwiches with tortilla shells (it's that whole flat and flexible thing.) This time I used two pieces of multi-grain bread with the crusts cut off. Microwave the bread for 10 seconds to make it really pliable.
Stack one slightly on top of the other, width-wise.
Roll it flat with a rolling pin.
Spread your toppings of choice - peanut butter & jelly
Or prosciutto -
And roll up!

Neat idea! I'll have to try this one day. My boss (before I was a SAHM) used to bring what she called "turkey roll-ups" for lunch. They were turkey slices spread with cream cheese and rolled up. I thought that was an odd combination, but maybe turkey with a spreadable cheese rolled up in bread would taste good.
Ooh, try turkey with some Boursin herb cheese!
