7 Bento #232 - Stars & Pinwheels

Happy Friday!  Oh my gosh, craisins again??  This is the last for a while, I promise!  At least E isn't wholly sick of them yet.  These Colby cheese pinwheel roll ups are made with rolled out sliced bread.  They were falling apart a little, but they stayed together in their side of the box.  And salad!


The ubiquitous craisins in a star-shaped cup and yogurt stars!  The salad dressing is in the blue bear cup.


E and I made spiced apple muffins (Trader Joe's) with...craisins.  It's kind of a joke now, isn't it?


This is the bento box that I got from a Crocs store, totally perfect (it even came with the bow strap!)

Dinner for lunch!  Fresh tomato basil bruschetta with a splash of vodka makes the sauce, seared organic chicken thighs and tossed with whole wheat farfalle pasta and Parm.  REALLY good, and easy.  I'm using my two-tier Greentainer, which holds a ton!


Side salad of artisan lettuce and dressing.


...with a LOT of focaccia croutons (I emptied the bag, and it was more than I had expected!) Craisins round it out.  It's craisins again because I keep forgetting to get different dried fruit for those times when I'm out of fresh...like NOW.  That's going on my shopping list as I type.




No snack because they are doing a special one at lunch today.

4 Bento #227 - The Owl & The Ladybug

BACK TO SCHOOL!  Today we have a super CUTE pot bellied owl PB&J sandwich with a jolly apple tum, cheese and blueberry eyes and apple beak and feet.


For the body I freehand cut the bread because I don't have a large oval cutter.  For the belly I cut one side of a Jonagold apple, and then used it as a template to cute out the middle piece of bread, and then set the cut side down on the peanut butter.  The wings are pieces of crust.


The ladybug is a Baby Bel, tab pulled off and cheese removed.  I cut out the dots with a small circle deco cutter, and then put the cheese back in.  The eyes are two of the cut out dots squished together.


We also have some really sweet and delicious fresh blueberries.  These are the best I've had in a long time!  We had some for dessert last night with sliced kiwi.  Ella actually made the salad herself, she's very proud of it and wanted some in her lunch.



Bento #227 - Organic peanut butter and strawberry jam with an apple slice, cheese & blueberries, croutons, and tossed salad.  Snack - Carrot apple Crusher and peanuts.

0 Bento #203 - Hello Kitty Onigiri & Thai Chicken Peanut Salad

My version of Thai peanut chicken salad was soooo good!  I made enough for lunches for all three of us.  I picked up some Amylu Caramelized Onion Chicken Burgers for the first time, and they are delicious!  They are all-natural, gluten-free and excellent.  I cubed a couple of patties and sauteed them in a bit of canola oil, along with some ginger-garlic paste, fish sauce, toasted sesame oil and a small handful of halved roasted peanuts.  In about 7 minutes I had a savory-sweet salad topping that everyone loved.  I had initially planned to do lettuce wraps, but I realized that all my lettuce was small-leaf variety.  This would be awesome on Boston/Bibb/Butter lettuce.


I also made a Hello Kitty onigiri of plain, cooked rice.  She is decorated with a few decorative sprinkles to liven up her appearance.  I also froze a container of vanilla yogurt, in lieu of the ice cream they allow the kids to have on Fridays.



Bento #203 - Thai chicken peanut salad over fresh artisan lettuce, rice onigiri, and frozen vanilla yogurt.  Snack - organic baby carrots, dip, multi-vitamins, and fresh raspberries.

Craaaaazy busy day yesterday!  I suffered mild sunburn all in the name of toxic shower curtains.  My local chapter of The Mommies Network was contacted by the Dr. Oz show and asked a bunch of us to come down with our old shower curtain liners and film a segment about their toxicity.  We filmed from 10am to 12:30pm!  I have several speaking lines, though who knows if my bit will ever make it on TV.  It was fun, and the show should air soon, during the next season which starts September 12th.



Goodness, my bento boxes are looking really stuffed lately!  I guess it's that snack.  This lunch consists of sliced steak and a little bit of mac n' cheese leftover from dinner and a whole lotta Hello Kitty.  The panda holds dip, and the little chickie holds two iron vitamins.  I finally found some without aspartame!!  Bluebonnet Rainforest Vitamins.



Bento #201 - Sliced steak, artisan lettuce, ranch, mac n' cheese, iron multi vitamin, and slushy applesauce. Snack: raspberries & granola bite.

E is home from school today.  She had a bit of a tummy upset yesterday, so I kept her home today just to be on the safe side.  She is feeling totally fine today, (since yesterday afternoon, actually) and requested salad for lunch.  I'm not one to turn down the request of salad, so I made one for us both - blue cheese, dried cranberries and toasted peanuts tossed in a light vinaigrette.  There is also some grilled chicken to go with the salad.

Bento #192 - Grilled chicken, fruit & nut green salad, and melon balls.

I also had a salad, but with baked dill salmon.  Yum!

This was a simple bento lunch.  E specifically asked me for scrambled eggies with cheese, and what a great choice, they are packed with protein and good fat (as are the macadamia nuts!)
