1 Bento #190 - Indian Cucumber & Chicken Sandwich

Ella just loves anything with cucumber, so I made her a sandwich with some sliced cucumber, a bit of Duke's mayo and baked chicken breasts that had been marinated in Greek yogurt, ginger-garlic paste and some Indian spices.  I sliced it thin and put it on whole wheat.

This recipe is so very easy.  You can use tzatziki for dipping veggies, or you can just eat it plain (yep, really!)


You'll need:

4 oz plain (I like whole) Greek yogurt
1 cucumber, peeled, seeded and minced
1 clove minced garlic
1 tsp white vinegar
2 tsp EVOO
salt and pepper to taste

To seed a cucumber (I'm sure you don't need me to tell you) you slice it in half length-wise and take a spoon and just scoop.

I LOVE the brand Fage for Greek yogurt.  It's so decadent and smooth.



Measure out your yogurt into a mixing bowl



Then squeeze out all the excess moisture from your cucumber.  Put it in a paper towel and squeeze the heck out of it.  BTW, see that paper towel seem there?  Don't do that.  It will split when you squeeze and you will lose your precious bits of cucumber. =(


Add the rest of the ingredients and mix well.  Cover and refrigerate for a couple hours to let the flavors meld.  Ohpah!
