Aaaand for dessert - apple serniki!  If only you knew what a serniki was.  Good thing I do!  It's very similar to cheesecake, and it's DELICIOUS and so very easy.

Remember that Apple Butter recipe I posted last week?  Hopefully you made it, and have some left.

Apple Serniki

1.5 packages cream cheese, room temp
2 eggs, beaten
1-1.5 cups of apple butter

Preheat oven to 300.  Mix together cream cheese and apple butter, and slowly incorporate the eggs.  Mix well.  Use paper cups in your muffin pan, and evenly distribute in each cup.  Bake for 40 minutes, and then thoroughly cool to room temp, then chill.  Dense, creamy deliciousness. Top with whipped cream if you like.

You could also make a pumpkin version with pumpkin pie spice, 1 cup sugar (or sub), 1 tsp vanilla and canned pumpkin (about 8-10 oz.)
