5 1/2 pounds of apples, peeled, cored and chopped (I used a combo of Granny Smith, Honey Crisp, Braeburn and Red Delicious)
1.5 cups sugar (I use birch sugar, (xylitol) which is a 1:1 ratio)
1 tsp cinnamon
1 tsp vanilla
1/4 tsp allspice
1/4 tsp salt
Combine all ingredients in a crockpot
Cook on High for 2 hours.

Stir and continue cooking on low, stirring occasionally.

Cook down for 9-10 hours, until very dark brown and thickened.

Stir with a wire whisk to smooth, or use a stick blender to puree and distribute into jars - fills about 5 8-oz Mason jars. Freeze for longer-term storage, or can in Mason jars.
Enjoy on toast, waffles, pancakes, use as a sweet filling, or just eat by the spoonful! YUMM!
