1 Baked Apple-Cheddar Quinoa Balls

Saturday, January 18, 2014

BBWow, these are so delicious, and they are baby-approved!

I came across this recipe by recommendation from one of the moms in my mommy group. Turns out it's from the Little Grazers blog: http://littlegrazers.com/apple-and-cheese-quinoa-balls/

I made our own today. I adjusted it slightly for American measurements. I also misread the cooked-quinoa amount and used the entire yield from 1 cup of UNcooked quinoa. But it worked out great.

You'll need:

Yield from 1 cup of uncooked quinoa (so, cook 1 cup of quinoa according to package directions.)
2 medium Pink Lady apples, grated and squeezed of excess water (save the juice for a yummy drink!)
3/4 cup shredded cheddar cheese
1 beaten egg
olive oil or coconut oil
1/2 tsp salt

Pre-heat oven to 350F.

Combine all ingredients and mix in a bowl. Portion out into balls.  I used a measured scoop. Brush with some melted coconut oil or olive oil.

Bake for 30 minutes until golden brown!

Devour! They taste like Cream of Wheat (which I absolutely love) with a hint of apple sweetness and cheddar.  So good!

3 Bento #246 - Quesadilla, Pico de Gallo & Lime-Cilantro Crema

Wednesday, April 11, 2012

Sunday evening I made my delicious Baja shrimp tacos (and if you haven't tried them yet, you don't know what you are missing!)  For E's lunch I packed a small cheese quesadilla on a toasted corn tortilla, along with a small handful of chips.  Yummy and also vegetarian, and gluten-free.

Accompanying it is lime-cilantro crema, fresh cilantro and homemade pico de gallo, (roma tomatoes, white onion, cilantro, garlic, jalapeno, lime juice and salt.)  Dessert is raspberries!

All packed up.

0 Bento #203 - Hello Kitty Onigiri & Thai Chicken Peanut Salad

Monday, August 22, 2011

My version of Thai peanut chicken salad was soooo good!  I made enough for lunches for all three of us.  I picked up some Amylu Caramelized Onion Chicken Burgers for the first time, and they are delicious!  They are all-natural, gluten-free and excellent.  I cubed a couple of patties and sauteed them in a bit of canola oil, along with some ginger-garlic paste, fish sauce, toasted sesame oil and a small handful of halved roasted peanuts.  In about 7 minutes I had a savory-sweet salad topping that everyone loved.  I had initially planned to do lettuce wraps, but I realized that all my lettuce was small-leaf variety.  This would be awesome on Boston/Bibb/Butter lettuce.

I also made a Hello Kitty onigiri of plain, cooked rice.  She is decorated with a few decorative sprinkles to liven up her appearance.  I also froze a container of vanilla yogurt, in lieu of the ice cream they allow the kids to have on Fridays.

0 Bento #181 - Gluten-Free Pancakes & Ham

Friday, April 15, 2011

Whenever I make pancakes, I always make extra to layer between sheets of parchment paper and store in the freezer for quick meals.  These pancakes are made from a gluten-free mix, and are really good, tender and fluffy.

3 French Cooking Day

Monday, March 7, 2011

Another busy and fun cooking weekend!  I had my girlfriends over Friday for a French cooking day.  We became Julia Child acolytes and made her boeuf bourguignon, (which I just can't get enough practice at) gratin Jurassien (baked scalloped potatoes with Swiss cheese.  To.Die.For.  I may or may not have had 1/4 of it all by myself...) and tarte Tatin with organic apples and pears (which my brother-in-law made for us since he is the fabulous baker of the family.)  What an amazing dinner with the best of friends and family.

The Boeuf.

The Gratin.

The Tarte.

The Delicious.

I encourage you to give one or more of these a try - there is something here for everyone. The boeuf and the gratin are gluten-free (omit the flour in the boeuf or use a substitute), the gratin and tarte are vegetarian, and all of them are unbelievably delicious, and I guarantee you'll have a happy family around the dinner table.  Even better because almost all my ingredients are locally sourced, from the grass-fed beef and bacon I picked up from my local butcher shop, to the organic fruits, vegetables and herbs from my CSA.  Support local and whole foods!

Bon Appetit!

3 Pork Shepherd's Pie

Wednesday, February 16, 2011

Being a good English[-American] girl, is it any wonder that I love a hearty shepherd's pie?  My recipe is a spin on the classic, using fresh pork sausages instead of lamb, but you can certainly use whatever protein you like, including ground beef or even venison. (Edit: Technically a 'shepherd's' pie is only made with lamb.  If you use any other protein it's called a 'cottage' pie, but for simplicity and popularity's sake, we're using the 'shepherd's' moniker.) This recipe is also gluten-free!

My recipe makes one large pie for 6-8, or two small for 3-4 each.

You'll need:

2 lbs fresh pork sausages, casings removed (I used both Bohemian garlic and jalapeño cheddar from my local butcher, Findley's)
1 medium yellow onion, diced
1 large shallot, diced
2 cloves garlic, minced
2 carrots, cut into coins
2-3 medium tomatoes, diced
1 cup combo of fresh or frozen green beans and/or peas (I used TJ's Bean So Green frozen mix)
3/4 cup pureed cooked vegetable like orange/red bell pepper, carrot or butternut squash (opt)
8-10 fresh mushrooms (whatever you like), sliced OR dried mushrooms, chopped and re-hydrated (reserve liquid)
2 Tbs Worcestershire sauce
chicken or beef broth, or water on hand as needed
butter or oil, as needed
salt and pepper to taste
mashed potatoes for topping
shredded cheese for topping (opt)

Pre-heat oven to 375.

In a large skillet, brown the ground sausage.  If there is a lot of excess fat, siphon or spoon it out, (reserve some in a bowl just in case you need it as you continue) otherwise you won't get a good browning on the meat.  If you are using a low-fat protein, add some butter to help create a nice gravy.

While the meat is browning, chop your veg and re-hydrate your mushrooms, if needed.

A note about these dehydrated mushrooms...do make sure to chop them up!  After I re-hydrated these I just dumped them all into my cooking pan.  I had some really strange-looking and behemoth 'shrooms hanging out in my shepherd's pie when all was said and done.  Still tasted great, but some bites looked as if I were eating a wood sprite's poor little home, and your little ones might protest.

To the pan, add the onion, garlic and shallots, and cook for 2-3 minutes.

Next, add the carrots, cook for another 2 minutes, seasoning with salt and pepper as desired.  Add the beans and/or peas and diced tomatoes, then add the mushrooms with all liquid, and the pureed vegetable of choice.

If you don't have mushroom liquid and/or not using pureed veggie, add some broth.  We want to create a nice amount of liquid for gravy, but not too thin.  Also add the Worcestershire sauce, and bring to a simmer.  If the sauce is too watery, boil rapidly to reduce.

Isn't this gorgeous?  Looks like a pan full of jewels.

In a casserole dish, ladle in the meat and veggie mixture.

You have mashed potatoes, right?  Egads, that looks frightening.

I just used some white fingerling potatoes, butter, heavy cream and salt and pepper.  It's what makes the world go round.

Top with mashed potatoes and cheese.

Bake uncovered at 375 until bubbly, about 30 minutes.

Yu-uuuum!  It's a perfect meal in one dish.  You have your unprocessed carbs, nice multi-colored veggies, good fats and protein.  Miss E gobbled this right now, including the funny mushrooms. ;)  It's even better the next day.  You don't need to buy a mix or something frozen, you can easily make this at home yourself, and it'll be a lot healthier.

Handy printable: (I will try to do this from now on with recipes.)

7 Ricotta & Sausage Stuffed Bell Peppers

Sunday, January 9, 2011

I've been killing time today waiting for the snowstorm to pass, looking online for some nice and snug modern duvet covers, and boy are there great selections out there.  I'd like to get myself a new one for our guest room soon, and I see so many I like!  Hard to choose.

Anyway, I was thinking about what to do for dinner last night.  I have all these wonderful organic veggies, plus some others that need to be consumed soon.  Initially I was just going to do baked potatoes with ham, cheese and broccoli (simple, but delicious) but when I saw those beautiful bell peppers, I knew I should do something with those as well.  Stuffed peppers!

You'll need:

5-6 bell peppers
4 Italian-style chicken sausages, cubed (I used Aidell's)
couple handfuls fresh spinach, roughly chopped (about 3 cups)
1 medium onion, chopped
2 eggs
1/2 cup ricotta cheese
1 tbs Italian herbs
1 tsp garlic powder
salt and pepper to taste

Preheat oven to 400.

Begin by neatly trimming the tops off the bell peppers, and set aside.  You may also need to slightly trim the bottoms of the peppers so that they can stand on their own.  Remove the seeds and pull out the white veins.

In a mixing bowl combine eggs, ricotta, herbs, garlic powder, salt and pepper.  Mix well and set aside.

In a pan over medium-high heat, sautee in a little olive oil the onion and sausage until the onion is translucent and sausage slightly browned, then add the spinach (add a little salt and pepper) and cook until wilted.  Remove from heat and add one spoonful from the pan into the mixing bowl, and stir immediately (we are tempering the ricotta/egg mixture so that the eggs don't scramble.)  Continue spoon-by-spoon for about half the pan, and then add the rest and mix well.

Spoon the cheese mixture evenly into the hollowed bell peppers, and place onto a nonstick baking sheet.  I initially thought to make three peppers, but I had enough for 5 (and probably 6 if I hadn't filled them all the way to the top) so I made extra.

Place the baking sheet  into your 400 degree oven.  This picture shows them with the top on, but I think next time I'll leave them off so that the cheese gets nice and bubbly on the tops.  Try putting the tops next to each pepper in the oven, and just monitor them.

After about 30-40 minutes in the oven.

Delicious!  Creamy and filling at the same time.  I served this with a side of mashed potatoes that I made from the 3 I got in my basket the other day, as well as some roasted acorn squash (also from the basket.)  My husband walked around the kitchen while I was making them looking nervous and scared (he really doesn't like peppers) but he just ate the filling, and E ended up eating everything, including the pepper.  This was really simple to make, and so good, healthy, and gluten-free!

8 Bento #139 - Veggie Rice Salad

Friday, December 3, 2010

The other night I made a batch of jasmine rice for dinner...and then realized I didn't have a major ingredient I needed (don't you hate that?)  I pulled it out of the fridge last night and thought I could make something good with it, and all these wonderful fresh veggies I have.  Maybe a rice salad?  I have to admit, I don't think I've ever tasted a rice salad, let alone made one, but when I get a food idea in my head, I just have to try it.  I started by finely dicing carrots, celery, asparagus, julienned some cucumber and chiffonade some baby spinach.

I tossed it with the rice, along with some freshly cracked black pepper and sea salt, a few dried cranberries, and tossed it all with a pinch of Pecorino Romano cheese, and about 1 tsp of salad cream.  It tasted wonderful!  It's mild enough for a kid, but if I was making it for myself, I'd add some really good brined black olives, diced tomatoes and a hard boiled egg or two and a splash of cider vinegar to give it more body and depth.  The raw veg gives it this fresh, crisp texture, and the cranberries are sweet and give it a nice chewy bite.

1 Bento #113 - Gluten-Free Grilled Cheese Squares

Tuesday, September 28, 2010

Woo hoo!  Another PlanetBox lunch!  I think I'm starting to get the hang of it.  I also have the Big and Little Dippers, but I haven't tried those yet.  I bought a loaf of Udi's brand gluten-free bread, and E loves it.  She calls it "Lydia Bread" after one of her besties who eats a gluten/dairy-free diet.  I used it here for the grilled cheese, and cut the crusts off.  I "hid" the yogurt star amongst the nuts, as a little joke.  As for the camouflaged star, E said she found it quite easily. ;)

Bento #113 - Macadamia nuts, yogurt star, grilled cheese on "Lydia bread", baby carrots, ranch dip in the monkey container, and fresh watermelon chunks.

Anyway, yesterday was a fun day for E because both her mommy and daddy did centers in the morning.  I helped the kids make stretchy, slimy goo out of BioColor. (Yay me!  If you knew me, you'd think this was pretty funny.  Almost as funny as me doing a bug-themed center.) Daddy brought a tub of wooden pattern blocks and practiced patterns and making shapes.  Way fun.
