0 Bento #203 - Hello Kitty Onigiri & Thai Chicken Peanut Salad

My version of Thai peanut chicken salad was soooo good!  I made enough for lunches for all three of us.  I picked up some Amylu Caramelized Onion Chicken Burgers for the first time, and they are delicious!  They are all-natural, gluten-free and excellent.  I cubed a couple of patties and sauteed them in a bit of canola oil, along with some ginger-garlic paste, fish sauce, toasted sesame oil and a small handful of halved roasted peanuts.  In about 7 minutes I had a savory-sweet salad topping that everyone loved.  I had initially planned to do lettuce wraps, but I realized that all my lettuce was small-leaf variety.  This would be awesome on Boston/Bibb/Butter lettuce.


I also made a Hello Kitty onigiri of plain, cooked rice.  She is decorated with a few decorative sprinkles to liven up her appearance.  I also froze a container of vanilla yogurt, in lieu of the ice cream they allow the kids to have on Fridays.



Bento #203 - Thai chicken peanut salad over fresh artisan lettuce, rice onigiri, and frozen vanilla yogurt.  Snack - organic baby carrots, dip, multi-vitamins, and fresh raspberries.

This burger was leftover from lunch the other day at a restaurant. E is still pretty new to burgers, she only recently decided that she likes them.  The cookie is from a batch that E made with her grandmother during the snow/ice storm.  E is in some kind of growth spurt, because she's constantly eating!  Anyone else there with me?

3 The Counter Part Deux

We had a fab lunch today! We've just been recuperating after returning home from our family reunion yesterday evening. We decided to lunch at The Counter. I hesitantly tried their Maryland crab cake, and while it wasn't my favorite (I mean come on, I'm FROM Maryland) I can easily see how people like it. Ian had a blue cheese burger with tzakziki sauce and pepperonicis, and E had a grilled ham and cheese with applesauce and a side of Silly Bandz. We also shared a chocolate malt shake, but the best thing by a long mile was their Parmesan and garlic rosemary aioli fries. OMG. To die for!!

For our 8 year anniversary, my husband took our daughter and I to a gourmet burger place called The Counter where I ordered and ate (well, half) the most amazing custom burger full of all-natural and organic products...soft ripened brie, grilled pineapple, red onion, roasted red peppers, lettuce, chipotle aioli on a bun. And fries. And onion straws. And some chocolate milkshake.  Oh, my.



My husband ordered his with feta, red onion, pepperonicis, lettuce and tzatziki sauce.



Yep. And every single bite I ate with pleasure and no regrets. At least not 'till tomorrow. :p

I'm looking foward to our real anniversary date this weekend - we are going to a cocktail reception at the symphony, and seeing a Verdi opera.
